
Every year we have our Christmas diner on Christmas eve and take the leftover ham to use in our holiday breakfast casserole. We have broken out the steps below (only we are using sausage in the photos since we didn’t have any left overs 😮
What you will need:
- 1/2 Panettone Bread/Cake
- Meat of Choice – Holiday Ham is Best
- 1/2 Onion
- Whole Bell Pepper
- 6-8 Eggs, we used 6 Extra Large
- Shredded Cheese
- Salt & Pepper to taste

Bottom Layer
Cut 1/2 Loaf of Breadbinto 1” pieces and place on pre-greased 9” casserole dish

Chop Filling
Cut pre-cooked ham/sausage, onion and peppers into small pieces and add to casserole dish

Add Egg & Cheese
In a small bowl, whip eggs, salt, pepper until blended. Add egg mixture to casserole dish and top with shredded cheese.

Cover & Bake
Pre-Heat oven to 350 degrees. Cover casserole dish with foil and bake for 45 minutes. Remove foil and bake an additional 15 min to fully melt cheese.
