Who loves pineapple?

We are fortunate to live in the sunshine (mostly rainy) tropical state of Florida. With that comes the ability to grow tropical fruits that would not make it up north (unless grown in a greenhouse or brought inside in the winter). For us southerners, we just cut off the pineapple tops and bury them in the ground. Because they are so easy to grow, we find our SWFL yard loaded with pineapple plants and this past week were were blessed with a big one!

We were gifted the original pineapple from a friend after Hurricane Irma and planted its top in the ground. It took about 2 years to produce its first pineapple and being new to growing them we didn’t know what to do after we harvested it. Many people said to leave it alone and it would grow another so that is what we did and above is #2 from the same plant (or pup just like bananas)!

Since we were going out of town to work on our off grid property, we decided the best thing to do for now is to cut them up and preserve them. We have a handy little Pineapple tool we bought on Amazon when we harvested our first pineapple and it has made cutting a breeze! It works like a corkscrew and when you get to the bottom you have nice rings for baking. For this time though, we cut the rings to create pineapple chunks. We also used the left over skins and core to create a spicy pineapple tea. Because we are new to blogging but want to have the information easier to access, we will create a second section for recipes and try to figure out how to link to it from the posts. If its one thing we both hate it is searching all over for the steps to make things so we will link at the beginning and end of any posts that have recipes.
